Beginner – Flavour recognition in water

For participants who are new to sensory training, FlavorActiV recommends starting with one capsule dissolved in 1 litre of bottled water. Using water as a neutral base allows participants to become familiar with the flavour reference without interference from the natural aromas and flavours present in coffee. This is particularly useful when introducing unfamiliar sensory characteristics or training new panel members.

Intermediate – Flavour recognition in coffee

For intermediate training, use one capsule in 300 ml of prepared coffee. Recommended coffee quantities:

  • Instant coffee: 3 grams per 300 ml
  • Ground coffee: 16.5 grams per 300 ml

At this level, participants learn to identify the reference flavour within the more complex sensory profile of coffee.

Advanced – Identifying flavours at lower concentrations

For advanced sensory training, use one capsule in 600 ml of prepared coffee. Recommended coffee quantities:

  • Instant coffee: 6 grams per 600 ml
  • Ground coffee: 33 grams per 600 ml

The larger beverage volume produces a lower concentration of the reference flavour, making recognition more challenging. This level is particularly suitable for experienced sensory assessors and coffee quality control teams looking to refine their flavour detection skills.

How to prepare FlavorActiV capsules in coffee

Follow the preparation instructions below to create consistent samples for coffee sensory training.

  1. Step 1 – Prepare your coffee: Brew your coffee using the recommended quantities for your chosen training level. Allow the coffee to cool to approximately 70–75°C (158–167°F) before adding the flavour standard.
  2. Step 2 – Measure the initial coffee volume: Pour 150 ml of the prepared coffee into a clean jug or pitcher.
  3. Step 3 – Remove the capsule: With clean hands, remove one FlavorActiV capsule from its blister packaging.
  4. Step 4 – Open the capsule carefully: Hold the capsule upright at arm’s length, facing away from your face. Gently tap the capsule and pull the two halves apart. If the capsule is difficult to open, carefully cut one end with scissors.
  5. Step 5 – Add the flavour standard: Empty the powder from the capsule into the prepared coffee.
  6. Step 6 – Mix the sample: Gently swirl the jug to disperse the flavour standard throughout the coffee.
  7. Step 7 – Adjust to the required volume: Add the remaining prepared coffee until you reach the recommended total volume for your training level: 300 ml for intermediate training or 600 ml for advanced training.
  8. Step 8 – Prepare the tasting samples: Divide the prepared coffee into individual tasting cups and cover them with lids until the tasting session begins. For comparison, we recommend preparing a second coffee sample without the flavour standard. This control sample allows participants to compare the original coffee with the flavoured sample and identify the differences.

Tips for effective coffee sensory training

  • Choose a neutral coffee: When using ground coffee, FlavorActiV recommends selecting a coffee with a relatively neutral, flat sensory profile, without strong or dominant flavour characteristics. Grind the coffee to a medium grind size suitable for filter brewing. This helps prevent the natural characteristics of the coffee from overpowering the flavour reference.
  • Use a control sample: Prepare an identical coffee sample without adding a FlavorActiV capsule. Comparing the treated and untreated samples helps participants focus on the specific sensory characteristic being studied.
  • Keep preparation conditions consistent: Use the same coffee, brewing method, preparation temperature and serving conditions throughout the training session. Consistent preparation makes it easier to compare samples and assess differences between participants.
  • Progress from beginner to advanced: Start by introducing the reference flavour in water before moving to coffee. Once participants can recognise the characteristic in a coffee matrix, gradually reduce the concentration by increasing the beverage volume. This structured approach helps build confidence and supports the development of more advanced sensory recognition skills.
